Brief Background
Brazilian Journal of Food Technology (BJFT) is a nonprofit, Open Access Journal that empowers researchers to accelerate progress in food science and technology through scientific communication as its mission. BJFT is supported by the Institute of Food Technology (Ital) of the Secretariat of Agriculture and Food Supply of the São Paulo State Government in Brazil. The first issue was published in 1998, as an evolution of the endogenous journal called "Ital´s Collection", created in 1965. In 2016 the Journal BJFT became an electronic rolling pass publication, with free access, whose content can be accessed for free online at SciELO and: http://bjft.ital.sp.gov.br/ with no registration. In 2022, the Brazilian Journal of Food Technology started the process of joining Open Science, in accordance with current and good national and international scientific communication practices. |
Open Science Compliance
The Open Science movement proposes collaborative, shared, and public scientific practice guidelines. Our editorial policy follows the research communication in the Open Science modus operandi. As part of our commitment to Open Science, authors are required to complete an Open Science Compliance Form (https://www.scielo.br/media/files/20220900-criterios-scielo-brasil.pdf). The BJFT, in line with Open Science practices, encourages authors to deposit their manuscript and supplementary materials (data, program codes, and others), at the time of submission or before it, on Preprint and Data repositories, respectively. Files can be deposited in the SciELO Preprints, SciELO Data, arXiv and bioRxiv repositories. The journal editors will analyze the acceptance of Preprints from other servers. Authors must provide this information in the “Open Science Compliance Form”. The authors may choose one or more means of opening the peer review process offered by the journal. The options are 1) the publication or not of the manuscript evaluation opinions if the submitted article is accepted for publication; and 2) direct or non-direct interaction with reviewers responsible for evaluating the manuscript. The authors must inform their options in the “Open Science Compliance Form” The completed “Open Science Compliance Form” must be sent in PDF as a supplementary file in the submission, and the conformity informed by the authors will be verified in the initial revision of the manuscripts and later by the editors and reviewers. |
Ethics in Publication
The Brazilian Journal of Food Technology - BJFT recommends the orientation presented in the “Good Scientific Practice” published by FAPESP - São Paulo Research Foundation. Authors interested in publishing papers in the BJFT must attend to the requirements described in the item “About the communication of research results and their authorship” of this important publication. The BJFT editors also follow the directives of COPE – Committee on Publication Ethics and recommend that authors and reviewers meet the requirements of this publication concerning their attributions. When the manuscript presents research results involving the participation of human beings in Brazil, in compliance with Resolution No. 466 of October 12, 2012, published in 2013 by the National Health Council of Brazil, the approval process number of the project by a Research Ethics Committee must be informed. BJFT makes use of the Crossref Similarity Check tool (iThenticate) for plagiarism evaluation, contributing to the security of the published articles. It is mandatory to include the ORCID of the corresponding author when submitting the manuscript. It is recommended that the ORCID of the other authors also be included. We strongly recommend that authors link their ORCID to preprints and data in repositories during submission. This practice promotes transparency and ensures proper attribution of work. It also supports the wider dissemination of research and fosters an ethical approach to academic publishing. |

The focus and scope of the scientific publication Brazilian Journal of Food Technology (BJFT) is to publish results of original research and technological information that contributed to the dissemination of new knowledge related to food production and assessment in the areas of food science, technology, engineering, and nutrition (not clinical). Original scientific articles, review articles and notes should be published in English. |

The Editorial Policy of the Brazilian Journal of Food Technology follows the research communication modus operandi of Open Science.
Editorial Independence
Responsible Authorship If there is interest from the authors, other collaborators who do not meet these requirements, such as suppliers of inputs and samples, those who helped to obtain resources and infrastructure, and sponsors, should be cited in the acknowledgments section. The order of authorship should be a joint decision of the authors. The corresponding author is responsible for the work before the Journal and must inform the contribution of each co-author to the development of the study, according to the CRediT taxonomy. Requests for modification in the list of authors, after receipt of the manuscript, will be met only in exceptional cases and after a careful evaluation made by the editors. However, from the acceptance of the manuscript for publication, requests for authorship change will not be authorized.

Preprints
The BJFT encourages authors to deposit their manuscript in a Preprint repository at the time of publication, or before it. The objective is to facilitate the evaluation of the manuscript, contributing to the preservation and reuse of contents and research, in case of approval for publication. In the context of scientific journals, a preprint is a version of an article that exists before peer review. Authors deposit preprints on a preprint server, often thematically related, following public procedures. The preprint can be either a final or incomplete version, although the most common is a final version. By using this service, authors establish a preceding date, request feedback, and incorporate suggestions into the manuscript, which is subsequently submitted to the formal editorial process of a journal. Manuscripts deposited on the SciELO Preprints repository or equivalent are accepted. Authors must inform the data of the Preprint manuscript in the “Open Science Compliance Form” (document to be completed and attached as a supplementary file at the time of submission). |
Use of Artificial Intelligence
The BJFT expects that articles report the original work and ideas of the listed authors. Any contribution from other sources must be clearly and accurately attributed. In this regard, any contributions from artificial intelligence (AI) tools and technologies to a study or the content of an article must be reported in a dedicated section of the Methods or the Acknowledgments. Chatbots (such as ChatGPT) should not be listed as authors, as they cannot be held responsible for the accuracy, integrity, and originality of the work. These responsibilities are essential for authorship. Therefore, humans are responsible for any submitted material that includes the use of AI-assisted technologies. In cases where AI tools or technologies, based on Large Language Models (LLMs), contribute to the generation of textual content, authors are responsible for ensuring that: the content is accurate and valid; there are no concerns about possible plagiarism; all relevant sources are properly cited; and all statements in the article, including hypotheses, interpretations, results, conclusions, limitations, and implications of the study, represent the authors' original ideas. |
Peer Review Process
Upon submission to BJFT, manuscripts undergo a desk review, which includes similarity checks. Subsequently, they are assigned to an Area Editor. Depending on the manuscript’s scope and overall quality, it is either sent to two reviewers or returned to the authors for revisions. In some cases, manuscripts may be rejected. The entire process follows a blind review, except for manuscripts whose authors, in alignment with Open Science principles, have either deposited a preprint of the manuscript or chosen to make the review openly accessible. The reviewers’ evaluations are submitted to the Associate Editor, who assesses the manuscript’s suitability for publication. In cases of disagreement between reviewers, additional reviewers may be consulted. If publication is feasible, the reviewers’ and Associate Editor’s assessments are shared with the authors. Authors review the suggestions and make relevant modifications, which should be highlighted in a different color within the text. There is no limit to the number of revisions; this process is interactive and depends on the promptness of reviewers, editors, and authors. At the conclusion of the process, the ultimate decision rests with the Editor-in-Chief or Area Editor, who approves or rejects manuscript publication based on the Associate Editor’s recommendation and the reviewers’ evaluations. This peer review system is the self-regulation mechanism adopted by the Journal to certify the credibility of the research to be published. As part of Open Science practices, when applicable, the names of Editors and Reviewers, as well as details regarding the review process, will be disclosed alongside the article. The initial evaluation conducted by the Editors takes into account alignment with the journal’s scope and guidelines, study relevance, breadth of focus, appropriate and reproducible methodology, recent and relevant bibliography, and the quality of written expression. The subsequent evaluation by the Reviewers and Editors/ Counsellors considers the manuscript’s originality, scientific quality, relevance, and technical aspects of the manuscript including the adequacy of the title and quality of the Resumo/Abstract, Introduction, Methodology, Discussion, and Conclusions, and the clarity and objectiveness of the text. |
Open Data
The BJFT journal encourages authors to deposit their data as supplementary material in a data repository, either at the time of publication or before it, if it cannot be published within the work itself. This information should be indicated in the manuscript. These contents should be deposited in data repositories such as SciELO Data, Zenodo, Figshare, OSF, Mendeley Data, or equivalent. The information must be included in the ‘Open Science Compliance Form’. Consequently, research articles should indicate and reference the availability of the content underlying the research and the results obtained. |
Fees
Upon acceptance for publication, the manuscript will incur costs associated with proofreading, editing, and layout of US $ 250.00 per article or R$ 1.050,00 (EcPay) per article. The publication fee may vary based on these costs, with the fee in effect at the time of publication being applied The publication process will commence following payment of the publication fee. Payment instructions will be provided by Editora Cubo to the corresponding author immediately after manuscript acceptance. In cases of rectification, correction, and/or retraction, authors residing in Brazil will be required to pay a fee of R$ 500.00 (five hundred reais), while authors outside Brazil will be charged US$ 100.00 (one hundred dollars). The cost of translating articles into English is the responsibility of the authors, thereby exempting BJFT from these costs. Once an article has been formally accepted for publication, its withdrawal by the authors will not be permitted, except under exceptional circumstances subject to thorough evaluation and approval by the Editorial Board. |
Ethics and Misconduct, Correction and Retraction Policy
The process of submitting a manuscript implies that the work described has not been published previously, except in the form of an abstract, published lecture, or academic thesis. The editors of BJFT declare that articles published in this journal may be subject to retraction under the following circumstances: There is clear evidence that the published results are not reliable, whether this is a result of misconduct (e.g., data fabrication) or honest error (e.g., miscalculation or experimental error); the results have been previously published elsewhere without proper cross-referencing, permission, or justification (i.e., cases of redundant publication); There are instances of plagiarism; The research reported did not adhere to ethical guidelines. Given the fundamental role of the peer review process in ensuring the integrity of scientific publications, it is predicated on the principles of truth, ethics, and responsibility by all participants. Policy on Conflict of Interest
Preventing conflicts of interest is crucial to ensuring the integrity and credibility of scientific output. Therefore, authors are required to declare any relevant conflicts of interest when submitting a manuscript. This includes financial ties, institutional relationships, or personal interests that may have influenced the research outcomes. Reviewers, chosen based on their expertise, should also declare any conflicts of interest to BJFT before reviewing a manuscript and maintain impartiality in their evaluations. Editors should appoint independent reviewers and disclose any significant relationships between authors and research sponsors. They should also maintain their editorial independence, uninfluenced by commercial, political, or personal interests in decisions about acceptance, rejection, or revision of articles that may be influenced by them. Transparency in reporting potential conflicts ensures the integrity of our publication process. BJFT is committed to maintaining an impartial approach at all stages of the scientific publication process, ensuring that the selection of articles for publication is based on quality, relevance, and scientific rigor. |
Adoption of Similarity Software
Within the evaluation process, after the acceptance of the submission, all manuscripts are assessed for similarity with other publications, the results of which are indicated to the chief editor and/or area editors. In this process, the Brazilian Journal of Food Technology makes use of the Crossref Similarity Check (iThenticate) tool to assess plagiarism. Depending on the result, the work is rejected, the author is notified and receives the report generated by the program. Therefore, authors should always accurately cite sources and properly reference both their own previously published work and the work of others to avoid issues related to similarity, self-plagiarism, and plagiarism." |
Gender and Sex Issues
Manuscripts submitted to BJFT should adhere to the principles of the Sex and Gender Equity in Research (SAGER) guidelines. According to these guidelines, the terms “sex” (a biological attribute) and “gender” (a social and cultural construct) should be used accurately to avoid confusion. |

When the work presents research results involving the participation of human beings in Brazil, following Brazilian Resolution 466/12 of the National Health Council Brazil, the project approval number by a Research Ethics Committee must be informed. |

The Brazilian Journal of Food Technology adopts a copyright policy that complies with the recommendations of the SciELO Criteria. In all articles, the respective authors retain the ownership of the copyrights, and the journal holds the right of first publication, including photographs that may be used to promote the article via social media. The articles are published as open access under the Creative Commons CC BY 4.0 license, allowing them to be reused and distributed without restrictions, provided the original work is properly attributed. |

Types of Documents Accepted for Publication
National and international manuscripts presenting new concepts or experimental approaches and not simply scientific data repositories will be accepted. Papers published in the BJFT are classified into these categories: ORIGINAL SCIENTIFIC ARTICLES: These are articles that report the methodology, the final results, and the conclusions of original research, structured and documented such that they can be reproduced with margins of error equal to or below the limits indicated by the author. The work should not have been previously published, except in the preliminary form as a scientific note or a congress abstract. REVIEW ARTICLES: These are interrelated extracts from the available literature about a subject that fits into this journal's scope and contains conclusions about the available knowledge. They should preferably be based on literature published in the last five years. SCIENTIFIC NOTES: These are partial reports of original research which, due to their relevance, justify prior publication. They should follow the same standard as a scientific article and could subsequently be published in the complete form as a Scientific Article. PREPRINT: The BJFT encourages authors to deposit their manuscript in a Preprint repository at the time of publication, or before it. The objective is to facilitate the evaluation of the manuscript, contributing to the preservation and reuse of contents and research, in case of approval for publication. Article Submission Format and Digital Assets
FORMATTING
- Microsoft WORD 2010 non-protected text editor UNITS OF MEASUREMENT: The International Unit System (SI) should be used and the temperature should be expressed in degrees Celsius.
EQUATIONS: The equations should appear in an editable form and only in the text, that is, they should not be presented as figures or sent in separate files. We recommend the use equation editor to present equations in the text. Do not mix digital tools in the same equation or mix these resources to insert symbols. Also do not use equation editors to present simple variables in the manuscript text (e.g., a=b2+c2), Greek letters and symbols (e.g., α, _∞, ∆), or mathematical operations (e.g., x, ±, ≥). Whenever possible, when editing the manuscript text, use the tool “insert symbols”. ABBREVIATIONS AND ACRONYMS: When strictly necessary, abbreviations and acronyms should be defined the first time they are mentioned. Do not use non-standardized acronyms unless they appear more than 3 times in the text. Abbreviations and acronyms should not appear in the Title, nor, if possible, in the Abstract or Keywords. NOMENCLATURE: Reagents and ingredients: preferably use the international nonproprietary name (INN), that is, the official generic name. Names of species: use the complete name of the genus and species, in italics, in the title (if present) and for the first mention in the manuscript. Subsequently, the first letter of the genus followed by the complete name of the species can be used. |
Digital Assets
TABLES & FIGURES: These must be numbered with Arabic numbers in the order they are mentioned in the text. Titles must be immediately above tables and immediately below figures, and must not contain units. Units must be between brackets in tables and figures. Tables must be inserted in the manuscript body soon after being mentioned. Photographs should be designated as figures. The location of tables and figures in the text should be identified. The TABLES should be edited using the resources of the WORD text editor available for this end, using only horizontal lines. They should be self-explanatory and easy to read and understand. Footnotes should be indicated by lowercase superscript letters. First, demarcate the columns and then the lines and follow the same sequence for the footnotes. The FIGURES should preferably be used to highlight the more expressive results. They should not repeat information found in Tables. They should be presented to allow a clear visualization and interpretation of their content. The captions should be short, self-explanatory, and with no edges. The Figures (graphs, photos, diagrams, etc.) should be in color and in high definition (300 dpi), to be easily interpreted. Figures should be in the form of a JPG or TIF file and should be sent (File upload) in individual files, separate from the main text, upon submitting the manuscript. These individual files should be named according to the figure number. Example: Fig1.jpg, Fig2.tif etc. Tables and Figures should be cited in the text and numbered in increasing sequential order, in Arabic numerals between parentheses, close to the right-hand margin. |
Supplementary Documents
Open Science Compliance Form must be sent in pdf as a supplementary file in the submission. Appendices and attachments: keep in the manuscript, right after the list of references. Supplementary Material: separate into an individual file (.docx format). Captions should be cited as S1.title/caption of the material, for example. Appendices, attachments and Supplementary Material must be cited in the text. |
Structure of the Article
COVER PAGE: title, running head, authors/affiliation (It should be submitted as Title Page). Title: This must be clear, accurate, concise (up to 15 words), and identify the main topic of the work. Running head: This should be written in uppercase and not exceed 50 characters, including spaces. Authors & Affiliation: Those who made effective intellectual and scientific contributions to the work are considered as authors, as they have participated in the conception, execution, analysis as well as in the writing or interpretation of the results. All authors must approve the final content of the work. If of interest to the authors, other collaborators, such as, for example, sample suppliers and sponsors, can be cited in the acknowledgment section. The corresponding author is responsible for all communication with the Journal and should provide information about the contribution of each co-author to the development of the study presented. The complete names of the authors should be supplied in full, followed by their complete affiliation (Institution/Department, city, state or county, country) and electronic address (e-mail). The name of the corresponding author should be indicated, together with the full address for postage purposes.

Title: This must be clear, precise, concise (up to 15 words), and identify the main topic of the research. Use words useful for indexing and retrieving work. Avoid trade names and abbreviations. If numbers need to be used, these and their units should come in full and in italics: the first letter capitalized for genus and lowercase for species. Include city or country names only when results cannot be generalized to other locations. Abstract: This must include the objective(s), material & methods (only information essential to understanding how results were obtained), the more significant results, and the study conclusions, containing no more than 2000 characters (including spaces). Do not use abbreviations or acronyms. Keywords: A minimum of 6 up to a maximum of 10 words should be included immediately after the Resumo and Abstract, which indicate the content of the work and allow for its recovery in literature searches. Do not use terms that appear in the title. Use words that allow the retrieval of the article in comprehensive searches. Avoid plural terms and multiple concepts (with "and" and "of"), as well as abbreviations, except those well-established and known in the field. Highlights: To give the article greater visibility and attractiveness, the journal publishes the article's Highlights. They must contain 3 topics, each with up to 90 characters (including spaces). Each topic should describe an important conclusion or result of the study, presented in the form of a sentence. Highlights must come after the Abstract. Introduction: This must bring together information to give a clear definition of the studied problem, referring to the current bibliography, preferably to indexed periodicals, allowing the reader to situate the work and justify its publication. Aiming to value the Journal, whenever pertinent, the citation of articles published in the BJFT is suggested. Material & Methods: This item must make it possible to reproduce the presented research. The employed methodology must only be written in detail when dealing with the development or modification of a method. In the latter case, the modification must be emphasized. All methods must be accompanied by their references. Results & Discussion: The results must be presented and interpreted, emphasizing the important points, which should be discussed based on current knowledge. Avoid duplicating the presentation of results in tables and figures. Whenever possible, the results must be statistically analyzed. Conclusions: The essence of the results discussion must be presented in this item, which proves or not the hypothesis of the work or highlights the results' importance or contribution to the knowledge advance. This item must not be confused with the summary, nor represent a summary of the discussion. Funding Agency: The corresponding author must disclose all sources of funding for the research project at the time of submission. This includes providing the full name of the funding agency, the country, the scholarship or grant number, and the year. The authors are responsible for the accuracy and truthfulness of this information. Acknowledgements: Individuals or organizations that contributed to the work but do not meet the criteria for authorship should be acknowledged. However, their consent to be named in the publication must be obtained. Expressions of gratitude to individuals or institutions are optional. References: The Brazilian Journal of Food Technology has adopted, since 2019, the style of citations and bibliographical references of the American Psychological Association - APA. The full rule and tutorials can be found at http://www.apastyle.org. The list of references should first be written in alphabetical order and then in chronological order, if necessary. Authorship
Authors are considered those with effective intellectual and scientific contributions to the work, participating in its conception, execution, analysis, interpretation, or writing of the results, and approving its final content. Authorship also implies responsibility for all aspects of the work and a commitment to collaborate in the investigation and resolution of issues related to the accuracy or integrity of any part of the work. If there is interest from the authors, other collaborators who do not meet these requirements, such as suppliers of inputs and samples, or those who helped to obtain resources, infrastructure, and sponsors, should be mentioned in the acknowledgments section. The order of authorship must be a joint decision of the authors. For the journal, the corresponding author is responsible for the work and must inform the contribution of each co-author to the development of the study according to the taxonomy CRediT. About the authors, one expects that they meet the following minimal requirements:

Manuscript Submission
Submission of the article is online through the ScholarOne system, accessing the link: https://mc04.manuscriptcentral.com/bjft-scielo If you are not a user of ScholarOne, open an account in the system via Create an Account on the Log-in screen. On opening an account, note the fields marked with “req.” since they are obligatory. If you are a user but have forgotten your password, use the Reset Password on the same screen. If you have any doubts about using the system, use the tutorial (Resources - Help / Site Support) below Log in on the screen. If necessary, use the Help button on the upper extreme right of the page. During submission, do not use the back button of the navigator. A cover letter for the manuscript must be submitted online via ScholarOne, describing the hypothesis, the main message, the novelty of the study, the importance of its contribution to the area, and its suitability for the Brazilian Journal of Food Technology. The author must indicate in the Cover Letter if the manuscript is the result of a defended dissertation or thesis. It is mandatory to include the ORCID of the corresponding author when submitting the manuscript. It is recommended that the ORCID of the other authors also be included. ORCID provides a persistent digital identifier (an ORCID ID) that you own and control, and that distinguishes you from all other researchers - https://orcid.org/). The BJFT journal, in line with Open Science practices, encourages authors to deposit their manuscript in a Preprint repository, as well as supplementary material in a Data repository, at the time of publication, or prior to it. The objective is to facilitate the evaluation of the manuscript, contributing to the preservation and reuse of contents and research, in case of approval for publication. Manuscripts deposited on the SciELO Preprints or SciELO Data, arXiv and bioRxiv repositories are accepted. The journal editors will analyze the acceptance of Preprints from other servers. Authors must inform the data of the Preprint manuscript in the “Open Science Compliance Form” (document to be completed and attached as a supplementary file at the time of submission). BJFT encourages its authors to make available all content underlying the text of the manuscript (data, program codes, and other materials), before, or at the time of publication. These contents should be deposited in the SciELO Data repository or equivalent. The information must be included in the “Open Science Compliance Form”. BJFT recommends that all authors link their ORCID to the preprint and data accounts during submission. Authors may choose one or more means of opening the peer review process offered by the journal. The options are: 1) publication or not of the manuscript approval evaluation opinions, if the submitted article is accepted for publication; and 2) direct or non-direct interaction with reviewers responsible for evaluating the manuscript. The author's options must be informed in the “Open Science Compliance Form”. The completed “Open Science Compliance Form” must be sent in pdf as a supplementary file in the submission. Article Withdrawal Post-Acceptance Once an article has been formally accepted for publication, its withdrawal by the authors will not be permitted, except under exceptional circumstances subject to thorough evaluation and approval by the Editorial Board. Authors' contributions The BJFT requires declarations of authorship and contribution when submitting articles to ensure adherence to authorship/contribution processes and policies. The BJFT adopted the methodology called Contributor Roles Taxonomy (CRediT) to describe the individual contributions of each author to the work. CRediT´s taxonomy does not determine who qualifies as an author. Authorship is determined by the policy of this journal. The author who submits the manuscript is responsible for providing the contributions of all authors. All authors of the manuscript should have the opportunity to review and confirm the contributions attributed to them. Each author can be assigned several contributions and a certain contribution can be made by several authors. When several authors play the same role, the degree of contribution should be specified as "main," "equal," or "support." |

Additional Information
After the manuscript is accepted for publication, the corresponding author will be notified of the approval via email. The journal's office will then perform preliminary editing and forward the file to Editora Cubo, the publisher responsible for collecting the publication fee. Once the payment is completed, the publisher will begin the editing process and send the article proof to the corresponding author. The proof may include comments and revisions made by the technical team. The author must return the revised proof within the deadline set by the publisher. If there are any remaining questions after the proof is returned, the publisher may contact the corresponding author again until the editing process is finalized. During the correction process, only editorial aspects of the text, as well as tables and figures, will be reviewed. Significant content changes to the manuscript will not be accepted. At the end of the production process, the publisher will send the article for publication on the SciELO and journal websites. The journal's office will then notify the authors about the publication. The final version of the approved article will be published with the name of the editor or editors responsible for the manuscript evaluation process. |
